You can use 2 cards but it makes no difference - and runs the risk that you get confused and use the wrong card to touch out at Gatwick.
If you are mobile enough to try getting back on the same train, you should not use the ramp at East Croydon, but instead the footbridge. The turnaround using the footbridge can be done in under 30 seconds - even less if the gates are left open and you don't have to physically go around.
When going towards Gatwick, the ramp is at the front of the train while the footbridge will be around the middle to 2/3rds of the way down of the train (depending on the train length).
