For Chinese restaurants (which feature a lot of seafood) Sun Sui Wah and Pink Pearl are good choices. There are several more options in Richmond. If you check the forum which discusses "Vancouver" and the HKG and CX fora, there are discussions in there on Vancouver chinese cuisine -- usually threads which mention dim sum, etc)
Lumiere is outstanding but Feenie's, right next door, a more casual and cheaper option is great for the price. Both feature complimentary valet parking which is HUGE bonus.
For sushi, Tojo's is the most famous in Vancouver and probably the most expensive. Aki, downstairs on the corner of Alberni and Thurlow, and Chiyoda, upstairs on Alberni Street, between Robson and Thurlow, are two excellent choices. Both also feature the robata grill. Aki is more "neighbourhood" style, Chiyoda is more upscale. I am from Vancouver and am Japanese and our family goes to these two places the most often, even takng guests from Japan who love it. Shijo and Blue Water Grill and Cafe are two additional options. Blue Water features seafood both Western style and Japanese style.
My favourite sushi joint is a take-away counter in Park Royal Shopping Mall, South side, in the Food Market area called "Sushi To Go." It is owned and operated by a sushi chef who tired of the restaurant business and offers some of the best sushi for the price, about half the cost of eating in a restaurant downtown. Park Royal Shopping Mall is on the North shore, immediately to the west of the Lions Gate Bridge, in fact, it is the shopping mall you see on the left hand side as you cross over from Vancouver.
