It's worth mentioning that Dublin seems to be going through another phase of pulling 50% of bags for secondary, without having the resources to cope with it - including in Fast Track. Very often they will just look at the screen and hand your luggage straight back to you, but only after you've stood waiting for 10 minutes for everyone else to be processed. If you ask them what caused the issue so you can plan around it, you get a shrug of the shoulders and are told "nothing".
If you actually arrive 1h15 before departure, and pay for Fast Track if the normal queue looks long, you should be fine, but you're reliant on a lot of different types of transport to achieve that. Unless you have a significant buffer between train arriving and coach departing, I too would look to take an earlier train.
You certainly shouldn't expect things to work as predictably as they do in Switzerland
