Yes uber is available in Poland

There is a bus that goes from the airport closer to the 'old town' than the train does. Not all trains go to gdansk glowny. Its number 210. While it ends up at Gdansk Glowny, the stop before that, Hucisko, is nearer the old town.

It has all bus and train times, and a journey planner. The app allows you to buy tickets too.
