Its a little misleading because it leads me to think I would get the $200 credit, but if i apply the FHR filter, only one hotel in Vegas shows up?

The Cosmopolitan is not a part of Fine Hotels and Resorts. It's a Hotel Collection property, so it requires a minimum two consecutive night stay for the program benefits.
You can still book the hotel for a one-night stay, but you won't get any of the program benefits.

The MGM hotels are a part of the Hotel Collection. You can find ARIA, Bellagio, Cosmopolitan, Mandalay Bay, MGM Grand, NoMad, Park MGM and W Las Vegas if you search for a stay with two consecutive nights.
You should get the $200 hotel credit for the Hotel Collection bookings if you pre-pay.
