For a short stay, I'd choose the Wangfujing area. There're plenty of hotels in the area, depending on your budget. The two Mandarin Orientals in the area are among the best, but they're expensive (for a hotel in China). I also like the Peninsula (older but still great and less expensive) and the Regent (very reasonably priced). However, a trip from/to PEK or PKX will take time, because of unpredictable Beijing traffic.
That's pretty far from the airport. CBD (maybe Shuangjing) is the furthest I'd go during that sort of stay, but I'd probably want to focus on places a little further north (e.g. Sanyuan Qiao or SLT).
