Today and tomorrow’s dinner is casual and my version of “Spaghetti” and Meat Sauce (I prefer rotini pasta and my sauce has a consistency a lot closer to a stew) accompanied with a 2021 Kirkland Chianti Classico (1/2 cup of which is included in the sauce and also great to sip on while it simmers, hence the sauce splashes on the stemware

) and of course a generous amount of Parmesan Reggiano. The one downside is typically I use Ground American Wagyu and didn’t have any so picked up Ground Angus at HT coming back from polo yesterday as I didn’t want to go up to Costco on a Saturday morning)
