If you're going to be visiting Eiheiji (I highly recommend it) when in Fukui, there's Kanshukuen Eshikoto, which opened in November, 2024. It has just 8 rooms and offers unique French-Japanese cuisine, if that suits your fancy.

Closer to Fukui City is Awara Onsen Kofu Yuden Beniya, which has been around for a while but was heavily renovated in 2021. It's a traditional-type ryokan but it's pretty airy and fresh due to the update.

Do you think we will have better options if we went a different direction from Gero Onsen? Say towards Toyama, lake Biwa or even the Ise peninsula?
