None of what ive considered, including Wanosato seem to have the charm of Sanso Murata or Nishimuraya Honkan... Your recent Kyushu ideas are really making me consider another Kyushu trip instead... We don't really have to finish in Fukui city but we will be starting in Nagoya and have 3 nights... After the 3 nights we have to get to Osaka if welcome any other ideas. Thanks in advance.
We loved Shogetsu - the food was spectacular and the views of the valley from the room (and Daiyokujo public bath) are incredible. But no, it's not quite as atmospheric as, say, Wanosato (although Wanosato gets mixed reviews here and elsewhere, for what it's worth.)

If you're going to be visiting Eiheiji (I highly recommend it) when in Fukui, there's Kanshukuen Eshikoto, which opened in November, 2024. It has just 8 rooms and offers unique French-Japanese cuisine, if that suits your fancy.

Closer to Fukui City is Awara Onsen Kofu Yuden Beniya, which has been around for a while but was heavily renovated in 2021. It's a traditional-type ryokan but it's pretty airy and fresh due to the update.
