No need to travel semi annually, only need to book semi annually. You can book 2 nights back to back by booking each one separately during the 6 months validity period for the credit - i.e. booking Nov 2 -4 by making a reservation for Nov 2-3 any time between Jan and June, then reserving for Nov 3-4 between July and Oct. This way each reservation gets the $300 credit.
To be sure Amex FHR/THC is far better than the horrid Chase Edit which only covers super high end properties and has an even worse portal than Amex.
I have found a number of quite reasonable Edit hotels. Probably depends where and when you're looking at.
