'Breakfast' ex NA has always been poor although you do identify a recent enhancement insofar as the fruit plate, previously a starter is now a main. Once upon a time BA even had a smoothie but the caterers apparently struggled to clean the glasses so that got the chop. If they could just offer basic bacon or sausage rolls/sandwiches with a choice of brown or red sauce, without trying to gussie them up with eggs or cheese, I would be happier.
I think the issue with a lot of NA - East coast in particular - is that BA do provide some quite decent pre-flight dining for those with lounge access so the on-board catering is really designed for quick service given that most passengers are looking to maximise sleep. Appreciate that doesn't help you in WTP/Y.
I would agree that ex-India the catering is good as curries travel very well. There isn't much more you can spend on a cuisine that is often vegetarian based or re-heats well. I think things get a bit more problematic on the western options.
But the premise that BA's catering has improved in recent years is laughable - it took them much longer than anyone else to recover, particularly in CW, post C19 and then we had all the drama of brunch and suppergate - outed as a naked cost cutting exercise. I'm amazed that they haven't had a go at CE catering as this is generally good. But on longhaul, I would rate BA catering as below average and often poor. As a small example, they still haven't found a supplier for brandy/cognac in CW.....
