I saw other visitors with similar frustration (likely not with eight options) but it did work for some locals in line.

Otherwise
1) Airalo - would just not work at all.
2) Saily used the KDDI Network and showed a Hong Kong IP. It was pretty reliable otherwise, I was using a free gb I got from a promotion.
3) eSimAccess - Someone gave me a free gig from this (it is behind the scenes of a lot of other providers). It used IIJ network and gave me an Osaka IP. Was fine also.
4) Ubigi running of Docomo was the fastest for me and the selection of your own country (ie to make it look like I was still in USA) did work.
5) Nomad used Softbank and decent speeds and Hong Kong IP.
6) Eskimo also used Softbank but was considerably slower and showed a SIngapore IP.
7) Roamless was the final one on Softbank, was fast, and also gave me a Tokyo IP.
8) I also had Google Fi -- which I expected to be the only one to work at disneySea, but it let me down there. I didn't use it as much because it is so expensive compared to the rest.
Wow, thanks for doing this. I'd considered doing the same myself too, for the same purpose of Disney too! I guess it's safe to say that all of these tourist eSIMs are heavily throttled compared to local connections when hitting peak capacity like at the entrance gates in the morning.
