For departures, doors closing is typically the event to care about. However, if you end up sitting on the ground for an extended period of time, it's pretty easy to make a case for wheels up.

I've never heard of insuring departure delays, though, because arrival time is all that really matters from a practical standpoint, and is super easy to calculate without any ambiguity; subtract scheduled arrival time from actual arrival time.
