The Hilton is definitely much nicer. The Hyatt really needs renovation. On the other hand, the Hyatt is typically much cheaper than the Hilton, and the Hyatt is more conveniently situated. You can walk to downtown New Brunswick from the Hyatt, whereas you have to drive from the Hilton to just about anyplace. While you're only a few miles from New Brunswick, Route 18 tends to get congested during the day, and it may take you 20-30 minutes to drive the 2-3 miles to get into town.
If you stay at the Hyatt, try Priceline. You used to be able to get rooms for $35-45 on Priceline regularly.
