This is similar to what I did when visiting back in May, since I actually stayed a few days in Shizuoka City it was a side trip to Fujinomiya. I saw the peak of the mountain for about 10 minutes before the clouds rolled in and hid the whole mountain for the rest of the morning. I kinda felt bad for the people who came into the viewing room right after I did..
Least the Heritage center had good information about the history and the geology of the area.

Apart from a visit to actually climb Fuji San, I’ve never made a plan for myself and my spouse and daughter specifically to go see it.
Have to say your experience is absolutely typical of my own when it comes to Mount Fuji. The reality is that I’ve mostly seen Fuji San whilst travelling to places with notable vantage points and not so much at the vantage point itself. By the time we get to wherever it is that has the Fuji view, there might be a short window where it’s partly visible before becoming further and further obscured. By 10am or so that’s it, nothing to see behind the clouds. Similarly, going back, as dusk settles, Fuji San might reappear to tease you with glimpses on the journey back.
This is a photo from Hakone taken at about 10am. The views of Fuji San had been clear and distinct from the train heading Westwards from Shinjuku and also from the Hakone Ropeway, but by the time we reached Ubako Ropeway station it was quickly melting into the mists. Half an hour later it was indiscernible. This was in early April and faithfully represents most of my own March/April experiences, I don’t believe myself to have been remarkably unlucky, quite the opposite.
This is another typical photo, taken at Jōgashima one April. Hadn’t seen Fuji San at all that day, it then appeared as we were leaving to go back to Tokyo.
