We stay at the Hoodoo at least annually, and our opinion closely matches yours: this is an excellent hotel, one of Hiltons better properties in the Southwest, though with a few areas for improvement.
Large attractive rooms with a distinct local flavor, very spacious and stylish common areas. Lovely large pool, views of cliffs. Excellent beds, large bathrooms. Josie Wyatt restaurant is excellent, with prices to match.
Being only a short walk to Main Street shops and restaurants is really a plus, and not actually being on Main Street Moab with all its semi- truck traffic is very relaxing. As is common in resort towns in the Southwest and Rockies, they seem to be challenged with finding staff, and often some of the staff here is inexperienced in hospitality. Another nice feature is a large storage room for mountain bikes and other outdoor gear you don't want to lug to your room.
Hotel has treated us very well as Diamond members, though we come here during off-season (and you did hit Moab at high-season, during the summer national park visiting season).
(I laughed with your experience with the 'silent' a/c - we made the same phone calll! And yes, the sinks are definitely designed by an artist, not an engineer)
