I personally find the Swiss A340 seats to be more cramped than the LH 748 seats, so with a lap infant I would probably prefer the LH 748. With a seat, there's less privacy between the pairs of seats on the LH 748, so it's possible to see your daughter's face while both of you are wearing a seat belt.

LX is much better for solo travelers but LH is quite ok for a couple.
If you have 3 seats then LX have 2+1 options on the A343 while LH only have 2+2
As for FRA vs ZRH, walking down Z, going through security and then a short walk to the gate at FRA is not too bad, don't forget that ZRH will also have a security check before the train to A. And a good chance of a bus for the MUC flight too.
