On shuttle - I think you are right, though I would probably say the shuttle does a run (1 way leg) every 30 minutes, so with that in mind a 10 (pre) + 5 (post) = 15 minute idle window each 30 minutes does make sense.
On stay - yes basically you are right, it was the front desk that asked me on my departure time, and based on that, proactively offered me the breakfast move. I think they have their fair share of stop/layover guests experience to be able to ask these during check-in. It's also a probably good way to utilize unsold rooms (guessing during peak season, it will be harder to get such flexibility).
And as for the early check-in and "atypical" check-out, that wasn't too difficult either? (Perhaps the receptionist even suggested it him/herself?)
