Depends which country.

You can book from your account and add her name as additional guest on the booking.

Another option is to open a Hilton account for her, you can transfer points for free after 90 days and you can book it in her name directly.

When booking on the phone, it is possible for Hilton agents to completely change the name on an award booking, so that even when the points come from your account, your name doesn't appear at all and only your wife's name appears. But not all agents know how to do this.
