In my experience, most resorts in Bali are sprawling but they have buggies that can get you from place to place. Amankila seems to be the exception where you have to go through a network of stairs to get to your room. There's a lot of elevation at Mandapa and everything is spread out. Due to that, they expect everyone to call a buggy to move around the resort. I really enjoyed our river view villa there and we used the buggy a lot even though we don't have mobility issues. I also think Soori Bali would be fine. Are there any in particular you are looking at?
