Flex seems pretty straightforward. It looks like you can make changes or get a cash refund if you can't make the flight.
But the other fare classes will say "NOT ALLOWED" Then go into how to use flight credits you (I assume) you'd get for cancelling.
Can any QANTAS FFs tell me in plainer language what the change and cancel rules are (and fees if appropriate) for sale and flex tickets (saver not being offered on the flights I want). If it's as sample as Flex being the only one that offers cash refund, I might have to go that way. But can you cancel with the other fares and get a flight credit good for a year?

Normally the other fares will allow for conversion to a flight credit BUT the change fee kicks in when you go to use the credit (which is not uncommon for airlines when you do a change online and bypass the credit).
