Just my two cents: I think hitting all of Stowe, Burlington, and Quechee/Woodstock is doable and a good idea. Burlington is an easy drive from Stowe, so while you could stay in Burlington, you also could plan a day in Burlington from your base in Stowe. I also think that while there's nothing wrong with staying in Woodstock, I don't think it's really necessary. When you're ready to leave Stowe or Burlington, head to Woodstock (avoiding the interstate highway if you have the time; it will be a much more pleasant drive), spend maybe a few hours walking around Woodstock, and then drive to Quechee, where the Quechee Gorge is just spectacular but still no need to spend more than an hour there.

If you have the time, I love hitting both Maine and Vermont on this trip (and driving through New Hampshire to get from one to the other). And it may be entirely not convenient, but having grown up in New England and have seen my share of New England fall colors, there is nowhere where it has been more spectacular than a scenic area in Maine called the Height of Land.
