I don’t think between D-5 and gate control that DL upgrades single fliers lower on the upgrade list, skipping a higher ranked couple, if only one F seat opens up. I believe upgrades are frozen until the couple clears. Then at the gate, the GA does as you say and either splits the couple or moves down the list.
Actually, I believe I was just a victim of this today. I hit D-5 for a DTW-SLC Tuesday morning flight next week as a DM and a 2MM with +1 on reservation and it looks like they may have skipped over the two of us and upgraded a number of other Medallions this morning when window opened. Flight had been J9C8D5I5Z4 before window opened with a bunch seats open in FC and FCM offer was $213.93. It's now at J4C3D1I0Z0 with FCM offer at $643.93 as below. I find it difficult to believe there were a significant number of Medallions with higher priority than us.
