It is illegal to serve alcohol, and potentially offer alcohol, to Muslims in Malaysia, else it may simply be considered socially offensive/disrespectful. It's also possible some Muslim staff refrain from handling alcohol. Having a wine list available on demand seems reasonable. You will notice there's no alcoholic drinks on the drinks page of the Business Class menu.

I think the name thing is a nice idea but there's only 2 or 2 staff actually gregarious and confident enough to be having some chit chat and using your name - I think most are a little too shy and unsure of pronunciations to really go through with it. As a general rule I'd rather folks ditch policies that aren't working than half implement it as otherwise it comes across strange as you say.
