BR definitely uses the high density 777s on the TPE-SFO route, at least for the evening/night TPE-SFO flights and the midnight SFO-TPE ones. I think out of 6 return trips in the past 2 years I've had a 3-3-3 once and that was SFO-TPE on the midnight departure. You must have been lucky to get a whole row to yourself, I can't remember the last time I was on a TPE-SFO in either direction and the flight wasn't wasn't full (or very close) full in economy.
It was two days before Christmas. I have no idea why the flight was so empty. But I wasn't complaining.
Of course, you can check when you book the flight which configuration they're using, and only book it if it's the one you want. I guess it's possible they could change the aircraft later, but somewhat unlikely.
