I flew EVA 777 TPE-SFO a couple years ago, and it was 3-3-3. Seat width in econ was 18.3". I thought it was one of the better economy trips I had done. Of course, it helped that I had the whole row to myself, but just the single seat width I thought was quite ample for econ.
China Airlines does indeed use 3-4-3 on their 777s.
I had a bad experience with JL a few years ago, and so stopped using them. The cabin temp was kept uncomfortably high. I asked the FA and was told that Japanese flyers prefer the higher temp. I thought it was quite stuffy. If you're too cold, just cover yourself with a blanket. Not much you can do about a hot, stuffy cabin. Anyway, that one experience turned me off of JL forever.
