100%!!! Just say when!!! For a 757 to fly that route would require very little weight, and thus I would likely be the lone passenger. Something a curmudgeon misanthropic plane geek dreams of!

(and yes, I understand that even with 3 crew and 1 passenger I doubt the 757 could make that routing without a technical stop…)
