It has to be done deliberately, and I believe the manipulation required means you can't simultaneously move them both with a single hand.
Yes, I saw the diagram, so that will prevent accident but not deliberate act. I guess if one pilot wanted to do this it maliciously it will be hard to hide it from the co-pilot at take-off, right? But maybe not impossible...
