Changing second leg of award flight after flying first leg

I’m planning a trip with a friend to TQO and could use some help from the FT hivemind. I’m coming from EWR, she from IAH. My EWR-TQO round trip is super straightforward.

For her, it’s a classic skiplagging case. TQO-IAH is 40K miles, while TQO-IAH-MSY is 25K miles. If she flew TQO-IAH and then ditched the IAH-MSY leg, could she rebook IAH-MSY for some future date after landing and get value out of it? It’s a situation where an IAH-MSY leg would eventually be useful, so it’s not a total throwaway.

I know all the skiplagging caveats, but there’s an option with a 6.5 hour connection in IAH that seems safe to book except for under all the most severe of delays.
