I suppose I'm now not sure the difference between the two. I figured Change was exactly that--and would take you to a change flow. Cancel would be one-click, and the whole booking would be kaput.
There may be some confusion between the Cancel function and the cancel this trip function within the change function.

On the website to the right of the itinerary and the option to cancel when clicking on the ellipses in the App invokes the cancel function. This will outright cancel the itinerary, return the miles to your account and trigger a request to the refunds department to issue a refund, to the original form of payment, for the Fees & Taxes. The partner fee is lost.

Within the change function, selected similarly, you have the two options to change your current itinerary or cancel this trip and use the value to book something different. Think of the latter as a request to dispose of and replace the segment(s) you had previously purchased, but they won’t be disposed of until the replacements are confirmed. This retains the partner booking fee.

Following are some examples of each function.

Change:
  • changing you departure date
  • changing to a different flight on the same day
  • Adding, removing, extending, or shortening a stopover
  • change the origin
  • change the destination
  • upgrade or downgrade your cabin

Cancel this trip:
  • change of plans
  • deciding to go elsewhere, prefer TYO over FCO
  • different routing, different carrier, prefer AA over BA
  • parking your itinerary

I use the last suggestion when I no longer want/need the segments, but don't want to outright cancel and lose the partner booking fee. Maybe a change of plans or I prefer to fly revenue instead and I don't know where or when I will use the value.

As an example, I had a 75K J award (BCN-HKG CX) that I no longer needed. I used the cancel function to book a 4.5K SFO-PHX flight in the future. 70.5K miles were returned to my account and the fees & taxes delta was refunded. Later I changed that to what I wanted.

Correct. You can even change your search parameters multiple times. When you select an itinerary option it takes you into the purchase flow. The original itinerary is retained until you click on purchase. You can also click on "Quit" anytime before purchasing which exits the function and returns you to the still intact itinerary.

For clarity. There is no functionality within the APP to cancel or change itineraries. Selecting those options opens your default browser and pre-populates the information in the mobile version of the website. The browser window overlays the APP.
