Alexandria is very much worth a visit but he said the FS there was easily the worst he had ever experienced and he can't believe they've let it get to the state it's in. You could technically do Alexandria as a day trip, but that's a long day and I would recommend spending the night, especially if you are someone who can "tough it out" for one night (in quotes since at the end of the day, we are still talking about FS here). There is another well-known boutique hotel in Alexandria too (the name is escaping me at the moment), but it also needs a dire renovation.
Can't speak to the FS Sharm but I am not a big fan of Sharm in general. If you are a diver or snorkeler though, then it's definitely worth a visit. There are great spots all throughout the region.
Luxor - must visit if you are going to Egypt, but staying at the moment your best option is to stay on a nile cruise here and there are tons of terrific options; both fully private or small groups. I'm sure there are threads in the luxury travel forum covering these. As you note, FS isn't opening here until at least 2026, and I wouldn't hold my breath on that date. You don't need more than 1 night here unless you are extremely into history.
A nile cruise would also be considered must do. It's magical. For sites in general, Abu Simbel was probably my favorite of the main sites - fly in and out in the same day. Incredibly easy and efficient with how they have it set up, and the flights are short. It was spectacular.
As for the food - it would be a huge shame to go there and only eat at the various FS restaurants. There are lots of great restaurants throughout the country (both local options and at other hotels). Most of FS' restaurants aren't event Egyptian or Mediterranean. I've been to Eygpt a few times and never had any stomach issues. Obviously YMMV with that (as it could anywhere), especially if you are not an adventurous eater, but the food there is fantastic.
