Air travel is a means to an end, nothing more. People want that means to be available at a good value price point and that's generally what the airline industry has provided.
If you want extra space and better food then you can pay for it. And the price even for business class is much less than what it was- thirty years ago you were paying, in real terms, for economy class flights what you are now paying for business class flights. And business class has improved beyond all recognition, lie-flat seats were an innovation when BA first brought them in and now they're expected as standard.
As for the other things you mention, ATC shortages are worldwide (the airport here in the Isle of Man shuts for several hours each day due to a lack of staff) and, likewise, there are still big delays in the supply chain for repairs to things like airbridges. And airports have generally been forced to cut their landing and handling fees to attract airlines, so of course they need to get that income back through ancilliary sales- that means higher car park fees, exorbitant kiss-and-go fees, and an array of soul-destroying bars selling you £8 pints of Peroni at 7am.
