That used to be the case back in the day but AFAIK, it’s now possible to change the inbound after flying the outbound (so long as it’s not within 24 hours of the inbound flight’s departure time.

That said, I still tend to book avios as one way tickets when practical just to keep things simple as there is no financial consequence to having two single tickets (unless using a 2/4/1 et cetera).

Obviously you do need avios availability but that often comes thru last minute.
