You can make any change that leaves you ending in a valid routing. Changing a connection to a stopover can result in an invalid routing if it's in the continent of origin where only two stopovers are allowed. Also, there's a fair chance this will be viewed as subject to the $125 fee for a route change. Finally, the taxes and surcharges are likely to change and you'll pay that difference.
