Typically, the hotel loyalty automatically gets you the best rate available 95% of the time (if you pick a programme with a decent BRG), plus a further immediate discount of 5-10% which is typically best for most people, plus more generous rewards you can often use any time on anything (again, that depends on your programme) all that without status..
i think it really depends. i am not loyal to any airlines or hotel chains, but i stay invested in *A and OW. i guess that is due a lot to the fact that i have much lesser options with flights than accommodations. firstly, i prefer to stay in boutique hotels or those that are family run. i find that i often get better service and had quite a few memorable interactions with the owners. this is also why i like short-term rentals liek airbnb. secondly, the hotels chains do not have a footprint in many places that i visited. they can be off the beaten path destinations, but also in places like NZ, AUS, Austria, US national parks, etc. thirdly, when paying on my own dime, i like the flexibility of being able to choose based on location and price, and i suspect i end up saving more than what i would have gotten back in points

i also have less qualms about booking hotels through a 3rd party as i dont need to pre-pay most of the time. so the worst case is just paying more for a last minute booking when things happen. but that is not always the case for air tickets
