Out of curiosity did you ask for another main? In the past when my first choice has been revolting I usually ask for another (whatever is the safest option - usually the pasta) and they’ve always obliged.
I complained to the flight attendant and was offered another meal. She said to leave feedback, but the feedback in the IFE was not available.
Flew SQ FUK-SIN and SIN-ADL in the last week and food in J was excellent. SQ has a large selection to choose from with book the cook plus there is the regular menu, looking forward to my PER-SIN-LHR in 2 days. Not looking forward to my upcoming AMS-YYZ-YVR the 4 choices on each flight are not inspiring.
