I needed the email address to see if I can book their acclaimed 2 Michelin stars restaurant Smoked Room, and the Concierge told me reservations are needed 3 months in advance for this restaurant!

Completely agree! Leña has no Michelin star but it is an absolute gem and its cold meat room (under glass) can compete with any steakhouse in America!
For those interested in trying it out, here their current menu for May 2025 and wine list - note that even though they are in the same building (actually the basement) as the Hyatt Regency Hesperia Madrid, the 2 restaurants Leña and Smoked Room are NOT affiliated with the hotel so you cannot charge the meal to your room and get points Their prices are fair and their wine list offers superb Spanish selections by the glass also. Like most restaurants in Madrid, the first bookable time is 8:00PM, so have your snack in the late afternoon

The Concierge at the HR recommended several excellent restaurants on Calle Ponzano, barely 10 minutes walk (go out of the hotel, make a left, then another left, and walk to Calle Ponzano and make a right), and I am sharing the list:
  1. La Maquina De Chamberi, superb tapas and of course the obligatory Jamon Iberico de Bellota (this one is from Quarentena) - only a few people speak English but I really enjoyed my lunch there
  2. Sala de Despiece Chamberí, fantastic Spanish meat and seafood, great service and reasonable prices, but a very loud place. I came for a late afternoon snack but it was still loud and people said that at night when the fiesta is on full swing, it can be hard to heard LOL
  3. DeAtún Ponzano, fantastic seafood, and I did not have the chance to try it, but a person in the HR Club Lounge told me that the food was superb (as is generally the case with anything in Madrid)
