I recently stayed at the Hyatt Regency Tamaya Resort in New Mexico with my free night.

It was a great value with lots of freebies (smore kits, fresh bread every afternoon, arrival margarita, guided tour in the mornings), nice pools (with water slide for kids) and paid cultural activities (horse-back riding, pottery class, dream-catcher class, etc.) if you're into those. The gym and spa were quite nice, too.
