i think IAG will exercise options for Vueling to become a full 737max operation and the newer A320/321s will be dispersed to EI/IB and BA/BA EF to bring average age of fleet down.
There are inadequate numbers of A320/321s on order to replace old aircraft so I’m struggling to see any other options.
737max production is now ramping up!
The first IAG MAXs were originally due in 2023, then it was 2025, the latest published timeline is from 2026 to 2028 for the 8-200 and from 2028 to 2029 for the 10 (which has still to be certified).
As you say 737 production is ramping up but it's only now getting to the 38 aircraft a month limit imposed by the FAA over a year ago. I'm sure in time that cap will be lifted but when is anyone's guess. Boeing have recently announced they're going to 'stabilize' at 38 a month in the short term.
