But among the plans I found is this WindTre tourist eSIM promotion for some Jubilee this summer.

It appears to offer an eSIM which you can activate online, without going into stores.

But the rest of their offerings are not like that so it may be a one-off type of offer.

Kind of wary about charging €25 in case there's some fine print which might make tourists ineligible for some reason, even though the product is claimed to be for tourists.
Thanks for the link. I signed up for $29.62 USD, as it looks like the best option I've seen for a month of voice and data. One early hiccup:

You will receive a confirmation email at (email) within 48 hours.

Mobile line order number
..........

Activate your eSIM

As soon as you receive the summary email, you can activate your eSIM in just a few minutes via video identification. Will report back when I get the email

Update: I got the confirmation email very quickly, but it went into my spam folder. If you try this offer and don't see the email, check your spam folder.

The email does say to activate before your trip to begin using data on arrival in Italy.

Further update: the activation process is a royal pain in the a$$. Scan your ID document, turn on camera and microphone, put your face on camera, recite a phrase into the microphone, then download the contract (pretty straightforward) and then they send you the esim and it is active on arrival in Italy (or so they say). More to follow...
