I was quite frankly horrified when I realized that this "feature" would have displayed my name in huge font in the middle of the screen for the whole flight... and it took me a good few minutes to figure out how to disable it. It was not at all intuitive.
More details:
To disable name display, access the Settings menu (either using the wrench icon on the bottom right or the Settings option in the main menu), then Privacy. There is a toggle in privacy settings to turn off name display.
To log out, scroll to the very bottom of the main menu, where there is a Log Out button.

Exactly; they still request absolute confirmation by entering your DOB, according to the pictures in the original post of this thread!
For what it's worth, there is supposedly a 3-attempt limit before the verification is locked.
