I don't think anything changes with the e-gate announcement yesterday, we get e-gates after ETIAS goes live anyway, and until that even if you use them as happens in some countries they have to be stamped because there's no other way of recording entries and exits. And it's up to individual countries anyway. So there's a bit more spin than substance there.
You could probably fly into another European country and thence to Faro, but the time taken to do that is a lot more than it takes to queue for a booth. FWIW the only places I've had big waits since Brexit are Madrid, Malaga exit, Brussels, and Amsterdam. Other places have been fine.
