Looks like the apologetic email is all they are trying to give me.
I'll submit a properly filled in EU 261/2004 form and go from there.

Incidentally, the same thing happened in September and I don't recall encountering any issues getting the full compensation ($600, iirc)
I suppose we're already seeing them adopt Lufthansa approach to following the law.
