I think the hotel are fine with changing a one-person booking to two-person one.

I stayed here, and my booking was created as one person. I arrived, checked in, and received a voucher for each day of my stay.

I had someone decide to join me later on, so I went to the front desk and asked them to add that person. The desk person asked me how many breakfasts were needed and gave me that many vouchers. They didn't make any fuss at all.

I also overheard someone else doing what seemed to be the same thing at another time, and he was told he only needed the vouchers for his wife, which were given at that moment, and none needed for his kids.
