Ok, the amuse bouche is normally seafood based, but on the western menu the soups can definitley be had without meat and so can the salads (the protiens are put on top afterwards so just request them without). Deserts would all be vegetarian. Unless you're a strict vegan or something I would say about half the dishes on the F menu are suitable for vegetarians to some degree - one thing I have to give CX credit for is that the F catering has gone from heavy continental to lighter and more plant forward over the years - wasn't that long ago when the 10 oz or thereabouts wagyu striploin was the go to.
Soups are tricky: vegetable soups can contain consomme, bouillon, dashi, etc. Unless each item contains a list of full ingredients, the flight crew wouldn't be able to tell whether an innocent-looking vegetable soup may in fact be vegetarian, let alone vegan.
Same with dessert: lots of cakes and some other dessert items contain gelatin, which is a gross & nasty animal-derivative and decidedly not vegetarian, let alone vegan.
