If getting the coach you don't need to walk to the Heathrow coach station, that's for Terminals 2+3. There's coaches that leave directly from T5 arrivals level.
I think the coach stop at LGW S is closer to the Hilton than the train station is.
I'd probably get the coach to Gatwick and then after dropping your bags off use the train to get to central London
