The random chatter at the large middle distances of your flight reflects that air traffic control depends on radar surveillance. That capability typically extends only about 200-250 miles from land. Planes beyond those distances from land can be tracked on less precise indicators, and are assigned tracks and altitudes designed to keep separation.
Since full air traffic services beyond land radar coverage aren't provided, aircraft leave prescribed ATC frequencies and can use radio frequencies in common with other similarly-located flights.
