T5 to Hilton hotel Gatwick South

We have a domestic flight to Heathrow arriving 13.15 on a Tuesday and staying overnight at Gatwick prior to a connection the next morning.
I’ve read through the whole thread and am still unsure of the best way to travel. We no longer have Oyster cards and just use contactless when in London. We also have senior railcards for the trains (but not coachcards- and it doesn’t seem worth getting them).

There are 2 of us and 2 suitcases as well as a smell backpack each as hand luggage.

How long is it likely to take to collect luggage at T5 from an Edinburgh flight. We have never collected luggage before- we’ve always checked our luggage through

We aren’t in a particular hurry but if we can dump our cases at the hotel we may have time to get to a show.

Obviously we could get a taxi- pre booked- but I’m not sure of the timings to book one

From reading the threads, we could book the coach for say 3pm - surely we would be able to get to the coach station for then- but would be able to get on an earlier coach if the luggage collection didn’t take long. We’ve never been to the coach station at Heathrow or indeed got a taxi but I presume they are well signposted

The other option would be the Eliz Line and change at Farringdon. How easy is that change and is it well signposted. We are not familiar with Farringdon station. In that case we might just buy a off peak single train ticket to get out Railcard discount.

I would be hateful for any comments on our options. Thanks
