I still refuse to book a single hotel with these junk fees. I've 100% successfully avoided them. Hotels have never been about the 'experience' to me though and always about the room I get, if the bed is comfortable and a clean/working shower. I don't pay for fancier hotels just to have access to amenities like "better" restaurants that I will never, ever use in the first place. The junk fees only ever cover things I already get for free after my years of Marriott loyalty or absolute BS things like bicycle rental for 10 minutes (sarcasm).
