I guess the government probably restricts building of new structures within the city walls so there are fewer modern amenities there. Sofitel is indeed closer to the Bell and Drum Tower and the Wall and one street food market that i can't remember. But you would most likely will to take a taxi/Didi to get there thus I'd prefer the location of Canopy. I didn't stay at the Hualuxe so can't comment on that
